Marc Boutillez is an excellent small grower situated in the village of Villers-Marmery, and I have been dealing with his champagnes since 1999.
This rose Champagne is a blend of 70% Chardonnay and 30% Pinot Noir. Its mousse is intoxicating, with fruity and spicy aromas of the red hillside. On the palate it is refined, round, quite powerful, dominated by aromas of red fruits, all in a pleasant freshness.
This champagne pairs wonderfully with with some lightly smoked trout or lobster.
