I’m Tim Syrad, and I have been educating and entertaining people about wine for over 20 years.

Through my monthly wine society tastings in Richmond and Teddington, fine wine tastings and dinners, my wine tours to Europe and the New World and my corporate wine events, I celebrate the enjoyment that wine brings.

Together we discover new wine varieties and regions, new aromas and tastes, and fascinating matches between wine and food.  I connect wine lovers with wine makers, introducing the people whose passion and dedication create great wine to the people who enjoy it.

We kick off our 2018 programme with a look at one of the best known regions in France – the Rhone Valley.

Châteauneuf du Pape and the south will be our main focus as we taste through a superb selection of both red and white wines.  Grenache, Syrah, Mourvedre will be the key grapes for the reds while Roussanne, Marsanne and Viognier will dominate the whites.  I may also throw in a New World Shiraz to provide a contrast.

The Rhone Valley is a wonderfully diverse and vibrant region with an absorbing array of wine styles. It provides high quality at many price point and remains innovative in the face of global competition, domestic pressures and the effect of climate change on ever increasing alcohol levels. 

We will taste a broad selection of wines that will reveal the complexity and diversity of the region.

A superb tasting start to 2018 is in store.

Part 1 of my 2018 Cheese Course at which we will explore the world of cheese and wine, tasting 32 cheeses and 32 wines over 4 evenings.  

My objective is to broaden people’s cheese horizons – tasting cheese that is in prime condition, and pairing them with the most appropriate wines.

I will provide wines to complement each cheese and we take a journey of discovery that encompasses a huge range of style and taste. Whites, reds, sparkling wines, sweeties and fortified will all feature and I can guarantee that you will taste an eclectically diverse set of cheeses. Cow, Goat and Ewe’s milk cheeses will all feature.

The evenings are very relaxed, informal and no knowledge is required – only a desire to satisfy your hunger and thirst…..I’m confident you will not need to eat dinner after the tasting!

Burgundy needs no introduction for its wines.

We will taste a great selection regional, village and Premier Cru wines with cheeses such as Ami du Chambertin, Charolais, Abbaye de Citeaux and of course favourites such as Soumaintrain, Epoisses and the legendary Delice de Bourgogne.

Classic Europe

A spectacular tasting of cheese and wine from Northern Italy.

Two powerhouse regions of Italy are the focus of this session. Barolo, Soave, Valpolicella and Gavi to name but four will feature alongside some lesser known wines and cheeses such as Monte Veronese, Taleggio, Toma, Robiola and Fienotto. Fizz will feature.

The Graves region is the closest to Bordeaux and offers a wonderful mix of superb red, white and sweet wines.  No other area in the region offers such variety and yet Graves is often left in the shadow of the more famous communes such as Pauillac and Margaux and the wines of Saint Emilion and Pomerol.

Our exploration will take us to the high quality appellation of Pessac-Léognan – home to the classed growth wines, as well as Sauternes and Barsac and we may even nip across the river to show what Cadillac is capable of.

An impressive array of top wines will be tasted.

The whites will showcase Sauvignon and Semillon at their most impressive and expressive. White Bordeaux is highly underrated and deserves more attention.
Red Graves are highly influenced by the gravelly, well drained soil and both Cabernet Sauvignon and Merlot thrive.
Sauternes and Barsac need no introduction and the quality bar gets higher and higher.

As always, Bacco will provide a superb meal designed to complement all the different styles of wine.

Spanish wines are great but the country’s cheeses are not quite so well known. We taste through an exquisite selection that include Rioja, Rueda, Ribera Catalonia, Navarra, Galicia and even a good Sherry paired new cheeses such as Tetilla, Peral Blue, Retorta and Pastura.
