We visited Trinity Hill during our 2014 tours to New Zealand, and met winemaker Warren Gibson, who has been with Trinity Hill since 1997. A pioneer of the famed Gimblett Gravels – free draining soils too interfertile to support economic sheep raising, that were rescued in the 1980s from a cement factory by some determined wine growers.
Primary aromas of fresh raspberry and cherry alongside sweet spicy notes from the oak are evident on the nose. On the palate, the wine has soft, velvety tannins and will develop complex forest-floor and earthy characters with bottle age.
As well as roast lamb, roast duck and glazed ham pair beautifully with this wine. Gruyere makes a classic cheese pairing.
