Intensity and complexity is indicated by its golden colour, and ripe citrus aromas with delicate steely minerality. The palate is rich and complex, balanced by a refreshing acidity which keeps the long finish is refreshing.
This would be wonderful with some halibut, pan fried with beurre blanc, and a Soumaintrain cheese which is made just up the road from Chablis.

Defaix is the oldest domaine in the region. 45-50 year old vines are grown on south facing slopes on Kimmeridgian clay soils that make Chablis so special. 14th generation winemaker Daniel-Etienne Defaix continues the family tradition of keeping the wine on its lees for two years, lending greater complexity to the wine. This tradition historically ensured that there would be wine to sell every year, given the high risk of frost in the region.
