Marc Boutillez is an excellent small grower situated in the village of Villers-Marmery, and I have been dealing with his champagnes since 1999. We drank this in magnum at our wedding!
Blanc de Blancs Champagnes are made solely from Chardonnay, which was actually the minority grape variety planted in Champagne until more recently. As the climate warms, so the Chardonnay grape produces more characterful wine, and this is stunning. Fresh, elegant, balanced – with lovely biscuity notes on the palate.
This champagne is stunning with some lightly smoked trout, and a Chaorce cheese.
