Pedro Ximinez Turkey Flat, Barossa Valley
Pedro Ximinez is a grape variety from Andalucia, and is used there to make gorgeously sweet sherry. It has settled down very well in Australia, although it is still relatively rare. One of the last grape varieties to be harvested each year, the grapes are hand picked, crushed, and after a short fermentation are fortified and matured using a solera system dating back to 1997.
Its amber colour, intense marmalade and spice nose and luscious rich palate cry out for chocolate and figs, but why not give this a try with some pâté or blue cheese?
Four generations of the Schulz family have been tending vines in the heart of the Barossa, using minimal inputs and creating fabulous wines. We visited this region during my Australian wine tours in 2019.
