Lemon, pear and a sense of the sea (more prosaically iodine) on the nose, the palate has lovely weight and ripe flavour, and a long finish as the classic ‘steeliness’ shines through.
This would be a lovely accompaniment to some fillets of sea bream with a tapenade crust, and a Chaorce cheese would help finish the bottle off nicely.
Sébastien Dampt owns 5 hectares of impeccable Chablis vineyard. The basic Chablis, while not from Premier or Grand Cru sites, is made from vines grown on Kimmeridgian mineral rich clay, the majority being over 45 years old.
