Chablis Sébastien Dampt 2021
Sébastien Dampt owns 5 hectares of impeccable Chablis vineyard. This Chablis is made from vines grown on Kimmeridgian mineral rich clay, the majority being over 45 years old.
Lemon, pear and a sense of the sea (more prosaically iodine) on the nose, the palate has lovely weight and ripe flavour, and a long finish as the classic ‘steeliness’ shines through.
This is a lovely accompaniment to some fillets of sea bream with a tapenade crust, and a Chaorce cheese would help finish the bottle off nicely.
