Botrytis affected wines have been ‘infected’ by a fungus late in the season, which in the right circumstances, results in the grapes dessicating while still on the vine. The greater concentration of juice in the berries when they are pressed means the resulting wine will be sweet, and some (surprisingly attractive) mushroomy/honeyed aromas and flavours develop. The most famous example of such wines is Sauternes, which is made from Semillon (and Sauvignon Blanc) grapes. Parts of the Barossa Valley create the perfect conditions for the grapes that go into this wine – misty conditions in the morning, allowing the fungus to get to work, but breezes and sunshine in the afternoon stopping it get too far.
Thanks to the concentration, it is medium gold in colour, and exhibits intense, luscious lemon, honey and dried fruits on the nose. The palate is rich and concentrated, with ripe tropical apricots and a clean sweet finish. This is delicious with tarte tatin, or any quality blue cheese.
